Garlic and Herb Hummus

Best made ahead to allow flavors to combine. For a tangier taste, use more lemon juice or add hot chili oil made with olive oil to spice it up.

Ingredients
  • 3 Cloves Garlic roasted
  • 1 Tablespoon Olive Oil
  • 1 Can (15 ounces) Chick Peas
  • 1/2 Teaspoon Paprika
  • 1/2 Teaspoon Fresh Parsley
  • 1/4 Teaspoon Cayenne Pepper
  • 1/4 Teaspoon Sea Salt
  • 1/4 Cup Sesame Tahini
  • 1/2 Cup Water
  • 1 Tablespoon Lemon Juice
  • 1/2 Teaspoon Lemon Juice
Preparation
  1. Preheat oven to 350 degrees.
  2. Peel the garlic and rub with olive oil. Wrap garlic cloves in foil and place in the warm oven for 20–25 minutes or until garlic is soft and slightly roasted. Remove from oven and cool.
  3. Drain and wash chick peas and drain to dry.
  4. In the food processor, add all ingredients and spices. Puree the mixture into a fine paste, no chunks. Remove from processor and turn into a small bowl.
  5. Cover and chill.
