Bulletproof Veggie Buddha Bowl

This week we are continuing our series of healthy, brain-boosting recipes from some of the guest experts in my upcoming docuseries, Broken Brain. Today’s recipe comes from my good friend, Dave Asprey, founder of Bulletproof.

Your brain is an organ that’s connected to everything else happening in your body. Fixing your brain starts with fixing your body. Dave and I agree on the importance of eating healthy fats, high-quality protein, wild fish, and pastured eggs, and plenty of polyphenol-rich vegetables. This Veggie Buddha Bowl is a great example of an anti-inflammatory, brain healthy meal to make when you don’t have any pastured meat or wild fish on hand. Enjoy! Click here for PDF version. 

INGREDIENTS
  • 4 handfuls spinach leaves
  • 1/2 cup cauliflower rice, sautéed in ghee
  • 2 radishes, sliced
  • 1/2 cucumber, sliced
  • 1 avocado, sliced
  • 2 carrots, sliced
  • 2 pasture-raised eggs, poached
  • garnishes: fresh herbs, chopped chili, fresh lemon, salt and pepper to sprinkle on top, a drizzle of Brain Octane Oil on top
Preparation
  1. In two separate bowls, add the spinach leaves and cauliflower rice as the base of each bowl.
  2. Begin to arrange the veggies and poached eggs on top of each bowl.
  3. Add your garnishes.
  4. Serve and enjoy!
