Gluten
Public Group active 4 weeks agoGluten (from Latin gluten, “glue”) is a protein composite found in foods processed from wheat and related grain species, including barley and rye. It gives elasticity to dough, helping it to rise and to keep its shape, and often giving the final product a chewy texture. Gluten is the composite of a gliadin and a glutelin, which is conjoined with starch in the endosperm of various grass-related grains. The prolamin and glutelin from wheat (gliadin, which is alcohol-soluble, and glutenin, which is only soluble in dilute acids or alkalis) compose about 80% of the protein contained in wheat seed. Being insoluble in water, they can be purified by washing away the associated starch. Worldwide, gluten is a source of protein, both in foods prepared directly from sources containing it, and as an additive to foods otherwise low in protein.

Hi Meg…I have been gluten free , diary free and oats free since starting this program in July. Ive gotten off tylenol and prilosec and as long as I don’t eat any of the above I don’t have any stomach issues. Thanks for the reply. I too am gluten free, dairy free, sugar free. I will use some stevia, but sparingly. I had lost 60 lbs, but gained back 20. I want to lose another 50 lbs beyond that. My blood sugars run high normal. I’ve not had my A1C checked, but I wouldn’t be surprised to learn I’m prediabetic. I also have the…[Read more]

Welcome Maureen. Congratulations on finishing the 10 day detox. I am on the advanced plan for Blood Sugar Solution and have continued to exclude gluten and dairy and oats from my diet since July .
