Recipes 1 year ago Hi, I saw some people were wondering about almond milk, homemade so here it is.
Here is a recipe for Almond Milk
it does taste better home made.
This is a great idea if you have access to an almond tree or can buy local almonds. Store bought RAW almonds preferably organic are fine as well. Blanched or skin on are both fine.
1 cup RAW almonds
3 cups of purified filtered or distilled water (chilled in the refrigerator) plus water to soak the almonds
Soak the almonds in 1-2 cups of water for 4-12 hours in the refrigerator.
Drain the almonds and discard the water. (the water will be bitter.
In a blender, processor, or Vitamix combine the almonds with 1.5 cups of good quality chilled water until the almonds are completely ground to a pulp. It might resemble baby food. Add 1.5 cups more water and blend until smooth.
The almond milk is ready to use. If you want it smoother you can strain out the almonds with cheesecloth, but you are getting rid of the fiber and some nutrients so I do not recommend this.
It may be kept in the refrigerator for 2-3 days. Store in a glass container is possible.
If you want you can add vanilla or honey (2 tbs), maple syrup or a few dates, IF you are not on the six week BSS plan. In fact you can add any flavor you want or herbs such as tarragon or mint.
