    I made the Turkey spinach meatloaf with one pound of firm tofu (sliced, and pressed to remove more liquid, then crumbled) instead of turkey. I also added one cup of fresh herbs (parsley and mint and a little basil.)
    It was great and vegetarians can enjoy the recipe.
