    Thank you to my two new friends for their comments. I am tired and going to bed soon. John slept all day and I sat next to him. I did eat a salad for lunch that is an improvement and this afternoon I suddenly became aware that I was sitting watching TV and mindlessly eating candied pecans. I put the lid on the nuts and put them away. It was a first step.

    Well it has been one week. We have eaten more spinach this week than we have had in the last year. I have learned to cook three dishes very well. I’ve lost 3 pounds and we both feel super.We are looking forward to grocery shopping tomorrow and trying new recipes this week..

    Today is the first day that I went home and cooked and we ate and got back to work on time. We had that great Coconut Chicken Curry with Brown Rice and Salad. We drank water not Coke.     My dearest friend has Multiple Myloma and we go for Chemo twice every week it’s worrisome but at this point manageable. Eating this diet has made us both feel much better.

    Hi Barbara, I used the bone in chicken in the Lentil and Chicken Stew because the cooking time is 55 minutes.I used boneless in the Coconut Curry Chicken and Vegetables because the cooking time recommended is 25 to 30 minutes and I didn’t want to over cook the veggies. I put a little sesame oil in a saute pan sliced the breasts in inch wide…[Read more]
