Eggs are not one of my favorite things . When I fix one in the microwave I add a little water or preferably milk and microwave for 2 mon or so at 50% power. The eggs puffs up like a souffle and is light and moist but not runny. Quick and easy breakfast and what I cook it in is the serving bowl. These mornings my breakfast is about 3/4 cup stir fried vegetable cooked in coconut oil and 4 oz of some sort of protein and 4 almonds while I am cooking so I can start taking my pills. This breakfast brings my blood sugar up high enough that I can do my morning power walk without danger of going too low. I’m still taking insulin 2xa day (5units). If I am not going to go for a morning walk I have to adjust the amount of vegetables down.
Well that did not work out for me , can I cook eggs in a fry pan, I am on the basic plan but I can’t use butter because of the dairy is that correct?
Probably tecnically correct but Cooking my egg is the one place I fudge and use a little butter. You should have bought some virgin cold pressed coconut oil by now. It has wonderful healing powers and can be used at high temps. It is now the main thing I use for stir frying. It smells so good . Get the good stuff from your health food store . You can also use olive oil which also has great healing powers for us. Get first cold pressed the youngest you can afford. It has the most healing powers the first 3 months after being bottled or so I’ve been told. tblsp of olive oil with a couple sprays of balsamic vinegar is the only salad dressing I use now. My husband prefers pan fried and these days we eat breakfast separately. Because I have to eat before my walk to bring my blood sugar level up enough to walk. I heat up 3/4 cup precooked stir fried veggies and cook some sort of meat. Leave his protein on a plate. Go for my walk with our dog. Usually by the time I am back. He has come back, had his breakfast and is ready to go out to the hot tub which we do together before continuing with the rest of our day. it’s a good life! Day 5 of week 6 and I’m at 172.5 (still) headed for 120 no matter how long it takes.Still taking 5 novolin 2x a day. Plan on remaining on advanced plan until reach my goal.
I scramble eggs in a non-stick skillet with a sprinkle of sea salt, fresh ground pepper, and a small amount of water, just a tiny bit, about 1 TBSP. They are delicious. You can also poach eggs and they are good. I do not cook eggs in microwave. They cook very quickly on the stove top. I do not find any need for any oil when cooking.
