Recipes 1 year ago HOMEMADE COCONUT CREAM PIE LARA BARS
makes 4 servings1/2 cup almonds (or a mixture of almonds and cashews)
9 dates, pitted
1/2 cup shredded coconut unsweetened
1 teaspoon extra virgin coconut oil
Process almonds in food processor on medium until they form crumbs, about 30-60 seconds. Add remaining ingredients and process until a a sticky “dough” is formed. It will almost be the texture of clumpy, wet sand. Shape into balls and store in refrigerator until ready to serve.

are these allowed? just thinking that dates might have a lot of sugar, anyone know?

No your fine. I didn’t mean to sound so brash. lol
Dried fruit in general has a higher sugar level than fresh.
Sounds great. I may have to give these a try. I would really cut back the dates to 2 or 3 and mince them finely. The almonds and coconut would probably balance the high sugar of them and I’d guess the combined glycemic load would be ok for an occasional treat.
But bear in mind that I am not a trained nutritionist.
Dates are pretty high in sugar but I might try them for my kids. I wish I could think of something that would hold the ingredients together that is low carb!
Hi Barbara, What about grinding the nuts and using olive oil, tahini or egg, or almond butter to bind. You would have to eat it with a spoon, instead of a bar. If you added cinnamon (a lot) it might even taste sweet!
