    The longer I’m off carbs, the better I feel. Introduced some old friends to NEW baked kale chips! ha one loved them, one didn’t. That’s 50% who can get better health! ha

    • Okay, I have to ask! How did you make them? i am dying to make zuchinni chips, but I have no clue on how to!

      • 375 oven, pull leaves off stems (or purchase already torn apart kale, place on parchment paper, spray lightly with olive oil Pam or such, lightly salt (very lightly)
        Bake 10-13 min until edges of leaves are turning dark and loose most of oil shiny lool.
        Crisp, melt in your mouth chip-like.

          I think I will have to try that recipe. I have been wanting to crunch on and I love oven-roasted veggies. This sounds like a fun, 100% healthy treat.

      • Please let me know if you figure out zucchini chips. When I slide and roast them they’re usually limp because they have so much water, I guess. I’d love to make them crisp!

        • I have the zuchinni chips a try yesterday in two small batches, since my oven is really small.. However, all I got was soft oven baked zuchinnis. I don’t know what I did wrong but I will keep you posted on it.

      Thanks Lynn – I am gonna try those too. I keep hearing about them but wasn’t sure how to make them. I love kale any way shape or form so a chip should be awesome!

    Accidentally ’left’ this group. I’m immediately back. Feeling quite well all day. Energy, no slumps, no physical complaints. Had a delicious snack this afternoon. Those small red/yell/or orange peppers with hummus! Yum. Use the pepper for a small scoop. Yes, will work to stave off hunger.

    I am feeling ’level’ emotionally. No large carb bursts. No highs and lows. Lost 2.5-3#. Slowly getting the intake pattern worked out. Not there yet, but better.

    Is anybody here on inflammation planning to take the 12 week course on-line? I’d love to as I need to do it, but the cost is pretty steep. I know, your health is worth it! But I also know my budget only stretches so far, and the electric and gas companies don’t extend credit to people who claim they need to take an online course! ha

    • For your next trip, take along some delicious and healthy snacks. Stop every hour to stretch. If possible, stop at a nice spot, look around and walk.

    I’m hesitant to mention this, but the cost of the supplements is a bit overwhelming! I’m already on so many drugs…..yes I know, I hope to get off of some of them…. and the addition of that monthly cost is maybe more than I can handle. I haven’t done a total review / eval yet, but…….

    • I’m with you Lynn… Still looking for affordable supplements myself. I’m checking out Costco today!! I hear Trader Joe’s has them cheaper, too.

    • I was in sticker shock too with the supplements. I found my grocery bill has shrunk quite a bit when I follow the plan so I use that room for the supplements. I just stick with the important ones I can afford.

    • I was diagnosed with Fibromyalgia about 4 years ago – the pain is with me 24/7. I am hoping that this new diet with relieve me of this condition. I don’t exercise at all because of the pain – and I want to be more active…so I am going to give it a try.
