It is not starchy like acorn squash or butternut squash. But I could be wrong.
Another great vegetable that I love and forgot to mention (well, it’s light green but nonetheless) is fennel. Try rubbing a little olive oil on cut up fennel and roasting it in the oven. It’s delicious.

Thanks Rubea for all your comments. I’m working with my Dr. on all this as it is my goal to reverse my diabetes and that needs to be my focus instead of weight loss in and of itself.

Try upping it to 1000 and drinking lots of extra water. You might be surprised that this could break the logjam. You are eating too little. There is also eggplant (an amazingly versatile vegetable), swiss chard (comes in rainbow colored version), white asparagus, mesculun lettuce which has purple leafs in it, raddichio which is purple… yellow squash

I would love to be eating yellow squash, but I thought it was off-limits in the advanced plan? I eat zucchini, so maybe I am wrong about the squash. ???

I have never tried fennel, but the Italians seem to love it, and they have pretty great food, so I will give it a try. The best part about being on a “diet” is that it gives us the opportunity to find new foods and find new favorites. I had to do that on day 1 to wake up because I felt so sluggish and tired. I am planning on doing my walking workout in the am hours because the heat will soon make any other time of day unbearable. Aren’t we becoming the ”health nuts”?!

If you are settling into eating pretty much the same things day after day, shake it up and do something different! Thanks for the suggestions Rubea. I’m living on less than 600 calories a day so not much to trim. I don’t eat any fruits or beans or root vegetables. If anything – I think I may be too obsessed with my weight at this point and need to re-focus on my health and blood glucose readings.

Well that’s it right there – 600 calories, your body has gone into starvation mode and is holding on for dear life to every calorie. Try upping it to 1000 and drinking lots of extra water.
