The other night for dinner I made this bizarre (you blend soft tofu and pour it on top of a mix of veggies and then bake it. Weird, huh?!) and delicious dish that I wanted to share.
With it I made Forbidden Black Rice and Anasazi Beans (I added some Tamari, yellow onions, garlic and some red chili flakes to spice it up).
I have been eating left overs of this all week and am still not sick of it (small miracle). Give it shot!
