OK, I am wondering something. Janine, you said that your blood levels were adversely affected by your eating red meat, lamb and shrimp with whole eggs. Here is my question. How much of each serving were you eating in the month of the red meat? Also, was the meat that you were eating Grass Fed Organic Beef or was it conventional grain-fed beef? I think this makes a big difference. I also eat chicken and fish but any meat that I eat is organic, grass fed or free range, and local. 90% of the vegetables that I buy are organic and the rest come from my garden and I don’t use pesticides on my garden; haven’t for 12 years. One thing I have noticed that is a BIG difference for me is how much I eat anymore. For example, when I went to CHipoltle back in the day I could eat a whole burrito bowl, yes I would be overly stuffed but I ate every bite of it. Now, when I do venture for Chipoltle with the family or friends, I find I eat less than HALF the bowl. I even brought it home and gave the rest to one of my teenage boys with no feelings of deprivation. I remember eating like this back in college where food wasn’t really an interest to me. It feels good to know I am not controlled by food anymore. So happy!

    • Hi, Melissa,
Great question I am happy to answer. I believe each serving of regular, not organic, beef was about 4-6 ounces each time. With the lamb, I think the servings were about 4-6 ounces each, as well. I cannot yet afford to purchase organic, and I rarely eat red meats, but I was bored with all the fish and chicken. I also had 2 each 4 ounce shrimp servings that I added to my boulliabaisse. If these 8 meals (including the 4 whole eggs, instead of my usual egg whites) didn’t cause the problem, then I think the 105 cholesterol reading I had 30 days ago must have been an anomaly, which I am thinking must be the case since my LDL reading went DOWN 15 points and my HDL

      • …READING WENT UP. (BTW-I hit the wrong button while typing). It makes more sense that my numbers went down in the past 60 days rather than yo-yoing up and down during that time. I guess the choice that makes more sense is the correct one. Rather frustrating to think that the 105 reading was incorrect, but , on the other hand, my numbers are moving in the right direction, so that makes sense. It is frightening to think that 8 meals in a month of 90 meals + snacks could have that kind of negative impact.
