- 3 Small to Medium Yams
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Pinch Sea Salt
- Wash the yams and place in a large pot. Cover with water and bring to a boil. Reduce to low and simmer for 15-20 minutes until the yams are soft yet not mushy.
- Remove the yams from the water and set aside to cool until you can handle them. Using a knife or your fingers, remove the skin.
- Remove the water from the pot and place the yams back in the pot, add the olive oil and salt, and mash with a fork or potato masher.
