Whipped Yams

  • 3 Small to Medium Yams
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Pinch Sea Salt
  1. Wash the yams and place in a large pot. Cover with water and bring to a boil. Reduce to low and simmer for 15-20 minutes until the yams are soft yet not mushy.
  2. Remove the yams from the water and set aside to cool until you can handle them. Using a knife or your fingers, remove the skin.
  3. Remove the water from the pot and place the yams back in the pot, add the olive oil and salt, and mash with a fork or potato masher.
