Sweet Potato Parsnip Fritters

22 fritters Prep time: 20 min

Sweet, savory, and crispy—these Sweet Potato Parsnip Fritters make a perfect appetizer or side dish to compliment your favorite proteins. I love serving them with some fresh veggies and this easy Tahini Yogurt Sauce for dipping.

A hearty mix of shredded sweet potatoes, parsnips, and onions create a hash-brown like texture, held together with nutrient-dense eggs and almond flour. Sweet potatoes, particularly the orange variety, are one of the richest sources of beta carotene which supports immune health, as well as insoluble fiber to encourage gut health. Parsnips have a unique nutty and subtle licorice flavor—if you’re not familiar, they look like large white carrots. They’re a great source of vitamins C and K, as well as folate.

I hope you enjoy!

Wishing you health and happiness, Mark Hyman, MD
