Coconut Mojito Mocktail

This recipe is so refreshing and delicious. It’s great any time of day and makes an awesome alternative to a cocktail. 

Fresh mint, basil, and lime add lots of flavor and phytonutrients, while green tea offers some gut-friendly polyphenols. Coconut water makes this drink just slightly sweet and offers some helpful electrolytes for a hot day.

Ingredients:

  • 10 fresh mint leaves
  • 3 large basil leaves
  • ½ lime, quartered
  • ½ cup green iced tea, unsweetened
  • ⅓ cup coconut water, no sugar added (optional)
  • 1 cup of ice
  • About ⅓ cup sparkling water
  • Lime wedge, for garnish
Method:

1. In a large glass or cocktail shaker add the mint, basil and lime. Use a muddler or fork to press the juices from the limes and release flavor from the herbs.

2. Add the iced tea and coconut water along with half of the ice, shake or stir to combine.

3. Grab a large glass and garnish with a lime slice. Add more ice to the glass and pour in the shaken mojito mixture, including the lime and herbs.

4. Finish with a splash of sparkling water and enjoy!
