Herb & Veggie Muffins

4 servings Prep time: 30 min Cook time: 15 min

These beautiful purple muffins are an easy and fun way to get more veggies into your family’s diet. The violet hue is thanks to healthp-supporting anthocyanins in Japanese sweet potatoes, complemented with some shredded zucchini for additional fiber and vitamin A.

Almond flour and tahini offer good fats to support cardiovascular health, while thyme, rosemary, and sage contain a variety of phytochemicals linked to antioxidant activity, memory support, and immunity.

I know you’ll love these as much as I do!

Wishing you health and happiness,
Mark Hyman, MD

Over the darker winter months, we’ve likely been exposed to too much artificial light—much longer than our bodies would have liked. This artificial light can cause ill effects like headaches, tiredness, and eye strain. It can feel hard to avoid, but that doesn’t mean we have to stand by and suffer the negative consequences. I’ve mentioned before how much I love BON CHARGE and their lab-grade blue light glasses collection, so I was excited to learn they also make Light Sensitivity Glasses, which have helped reduce the amount of artificial light exposure my eyes encounter over the colder months.
