Coconut Curry Cashews

I think a  good snack should be easy to take with you, satisfying enough to tide you over, and delicious enough to serve when friends come by. This week’s recipe checks every box. Raisin purée adds a subtle sweetness and helps the curry and coconut cling to every cashew before they’re roasted until golden. Pack some for the road, or keep a batch nearby for your next movie night.

Coconut Curry Cashews

Ingredients 

  • 1⁄2 cup raisins
  • 2 cups raw cashews
  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon curry powder
  • 1 teaspoon sea salt

Step 1

Place the raisins in a small bowl and cover with ¾ cup boiling filtered water. Let soak for 30 minutes. Meanwhile, preheat the oven to 275°F and line a baking sheet with parchment paper.

Step 2

Transfer the raisins and their soaking water to a blender. Blend on high for about 45 seconds, until the mixture forms a loose paste. If it looks watery, pour it into a fine-mesh sieve set over a bowl and let the excess liquid drain off.

Step 3

Add the raisin puree, cashews, shredded coconut, curry powder, and salt to a mixing bowl. Stir until the cashews are evenly coated, then spread them in a single layer on the prepared baking sheet.

Step 4

Bake for 25–30 minutes, stirring every 10–15 minutes, until the cashews are golden brown. Remove from the oven and let cool completely on the baking sheet before serving or transferring to an airtight container.
