Mushroom, Lentil, and Parsnip Rosti

4 Prep time: 25 min Cook time: 1 hr

Some meals seem made for a slow evening at home. This French-inspired recipe has the deep flavor of something that simmered all afternoon, but it comes together in one pan in about an hour. Red wine, thyme, and whole-grain mustard build a savory base, while grated parsnips bake into a golden rösti topping. It’s rustic, satisfying, and exactly the kind of dinner I want when the night calls for something cozy.

A good meal is one of the many ways we can take care of our future selves. That idea is at the heart of my new book, 100: What to Do Today to Live 100 Healthy Years. Drawing on more than three decades of my work, it connects the everyday choices we make with how we want to feel and live in the years ahead. It comes out March 23, 2027, but it’s available for preorder now.

Mushroom, Lentil, and Parsnip Rosti

Ingredients

  • 3 tablespoons extra-virgin olive oil
  •  1 1⁄4 pounds cremini mushrooms, sliced
  • Kosher salt and freshly ground black pepper
  • 1 carrot, peeled and finely chopped
  • 1 large leek, finely chopped
  • 1 celery stalk, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon tomato paste
  • 1 tablespoon whole-grain mustard
  • 1⁄2 cup dry red wine
  • 1 (15.5-ounce) can brown lentils, drained and rinsed
  • 2 cups vegetable stock
  • 1 large pasture-raised organic egg
  • 1 tablespoon arrowroot powder
  • 3 large parsnips, peeled and grated

Step 1

Preheat the oven to 400°F.

Step 2

Heat 1 tablespoon of the olive oil in a 12-inch cast-iron pan over medium heat. Add the mushrooms and cook, stirring, for 8 minutes, until soft and golden at the edges. Season with 1 teaspoon salt and 1⁄2 teaspoon pepper. Remove the mushrooms from the pan and set aside.

Step 3

In the same pan, heat 1 tablespoon of the olive oil over medium heat. Add the carrot, leek, and celery and sauté until soft, 4 to 6 minutes. Stir in the garlic and thyme.

Step 4

Return the mushrooms to the pan, stir in, then add the tomato paste and mustard. Increase the heat slightly and deglaze the pan with the wine, scraping up any bits that stick to the bottom. Boil until most of the liquid has evaporated, about 2 minutes.

Step 5

Stir in the lentils, then add the stock and season with 1⁄2 teaspoon salt and 1⁄2 teaspoon pepper. Bring to a boil and cook for 2 minutes then remove from the heat.

Step 6

In a small bowl, whisk the egg with the arrowroot powder. In a large bowl, combine the parsnips with 1⁄2 teaspoon salt and the remaining 1 tablespoon olive oil. Stir in the egg and arrowroot mixture.

Step 7

Scatter the parsnips all over the mushrooms, leaving a 1⁄2-inch border around the edge. Cover the pan with foil and bake for 15 minutes. Remove the foil and continue baking for 15 to 20 minutes, until the top is golden brown. Serve immediately.

When I’m cooking, I’m thinking about more than just eating enough protein. Foods like meat and fish also provide creatine, a compound that helps supply energy to our muscles.

But I don’t rely on food alone, so I turn to Rho’s Liposomal Creatine Monohydrate. It’s become part of my daily routine to support muscle strength, exercise performance, recovery, and even cognitive function. There’s no powder to mix, and the liposomal delivery supports enhanced absorption so my body can actually use the creatine I’m taking.

Even with meat and fish on my plate, I’m typically getting only 1 to 2 grams of creatine daily. The clinically studied target for fitness performance is 3 to 5 grams, and I’d much rather supplement than eat larger portions. And if you follow a plant-based diet, getting creatine from food can be even more difficult. Rho makes it easy to help fill that gap.

Food is always my foundation, and creatine is one of the ways I build on it to support an active life. Try Rho with code HYMAN for 20% off sitewide.
