Protein Broccoli Breakfast Loaf

Protein Broccoli Breakfast Loaf

Ingredients

Broccoli Breakfast Loaf

  • 2 cups riced broccoli 
  • 5 pasture-raised eggs, room temperature
  • 1 cup almond flour 
  • ¼ cup psyllium husk
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon garlic powder
  • 3 tablespoons nutritional yeast 
  • ¼ teaspoon sea salt
  • ⅓ cup filtered water

Method

 Step 1

Preheat the oven to 350°F. Chop washed broccoli into pieces, you could include the stems but discard the leaves. Place broccoli in a food processor, and pulse until it forms the texture of rice.

 Step 2

Separate yolks and egg whites and whip egg whites on high using a mixer or hand mixer until stiff.

 Step 3

In a large bowl, add the dry ingredients along with the egg yolks. Mix with the broccoli and water until combined. Add more water if necessary but do not exceed ½ cup. Remember, you will be adding the egg whites so this might feel a bit dry.

 Step 4

Gently fold egg whites into the bowl with the yolks and fold until combined.

 Step 5

Grease a loaf pan with a bit of avocado or coconut oil and pour batter in, smoothing with a spatula.

 Step 6

Bake for 45-50 minutes, until the loaf is browned on top. Remove from the oven and allow to cool before slicing. Serve with your favorite spread or by itself.
