In this recipe, the balsamic marinade gives the steak plenty of flavor, while charred broccolini and a spoonful of salsa verde cut through the richness perfectly. It’s simple in the best way — a few good ingredients coming together into a dinner that’s just delicious.
Balsamic Marinated Steak with Broccolini
Ingredients For Steak
- 2 tablespoons extra-virgin olive oil
- ¼ cup balsamic vinegar
- 2 tablespoons apple cider vinegar
- 5 garlic cloves, smashed
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1½ pounds grass-fed skirt
Ingredients For Broccolini
- 1 pound broccolini, trimmed and halved lengthwise
- ¼ cup extra-virgin olive oil
- 3 garlic cloves, smashed
- 1 long red chile, sliced
- 1 lemon, cut into wedges
- 2 tablespoons avocado oil, for grilling
- Salsa Verde for serving
Step 1
To marinate the steak: Combine the olive oil, balsamic vinegar, cider vinegar, garlic, salt, and pepper in a sealable bag. Add the steak and rub the mixture into the meat. Seal the bag and marinate at room temperature for 30 minutes, or in the refrigerator overnight.
Step 2
For the broccolini: Preheat the oven to 425°F. In a medium bowl, toss the broccolini with the olive oil, garlic, chile, and lemon wedges until well coated. Transfer to a baking sheet and roast for 15 to 20 minutes, until the broccolini is bright green and crispy at the edges.
Step 3
Preheat the grill to 450°F (or heat a cast-iron pan on the stovetop over high heat). Oil the grill grates with the avocado oil. Grill the steak for 3 to 5 minutes per side depending on the thickness of the steak, until an internal temperature reads 130°F for medium-rare. Remove and rest for at least 10 minutes.
Step 4
Slice the steak into strips against the grain and serve with the broccolini and Salsa Verde.
