Thai Turkey Larb Lettuce Wraps

I try to build most meals around a quality source of protein, and this recipe makes it easy. These Thai Turkey Larb Lettuce Wraps are packed with bright herbs, bold flavor, and come together quickly. I love putting everything on a platter and letting everyone make their own wraps—it turns an everyday healthy dinner into something a little more fun.

Thai Turkey Larb Lettuce Wraps

Ingredients 

  • ¼ cup lime juice
  • 2 tablespoons fish sauce
  • ⅓ cup thinly sliced scallions
  • 1 red Thai chile, seeded and finely chopped
  • ¼ cup chicken stock or water
  • 1 pound ground turkey
  • 1 large shallot, thinly sliced
  • ½ cup torn fresh mint leaves
  • ½ cup fresh cilantro leaves, roughly chopped
  • 1 to 2 Little Gem or Romaine lettuce heads, leaves separated
  • ½ English cucumber, cut into thin matchsticks
  • 1 cup shredded white or purple cabbage
  • 1 large carrot, peeled and julienned
  • 1 lime, cut into wedges

Step 1

In a large bowl, combine the lime juice, fish sauce, scallions, and chile; set the sauce aside.

Step 2

Heat a large pan over medium heat. Add the chicken stock and ground turkey and cook for 5 minutes, using a wooden spoon to break the meat into smaller pieces as it begins to brown. Add the shallot and cook for another 4 minutes, until the shallot has softened and the turkey is no longer pink throughout. Cool for 5 minutes. Add the turkey to the sauce and toss to combine. Stir in the mint and cilantro.

Step 3

Arrange the lettuce cups on a platter, fill with scoops of turkey larb, and add cucumber, cabbage, and carrot for garnish. Serve with lime wedges.
